It is the name that receives a highly polluting waste water, as it is very corrosive, in addition to its high solids content and suspended organic matter. It has high parameters in pH (more than 11 ) and high calcium salts. It's essentially bleach or ash water. The word is of Nahuatl origin. Residual water from the nixtamalization or alkaline soaking process prior to the cooking of corn, which is done by adding lime or ash, to remove the parchment from the grain, transparent or bran outer skin.
